Autumn Essence at Square One

This December, discover the essence of autumn with our chef-recommended menu at Square One restaurant. Start the meal with an earthy and refreshing chestnut soup, enhanced by sweet chunks of beetroot. To perfectly please taste buds, choose a main course from selections such as Jean Larnaudie duck breast served with seared foie gras; French Chicken paired with winter black truffle pot pie; or butter-poached Maine lobster with caramelised cauliflower purée. Lastly, finish the meal with Chef Narae’s interpretation of a classic American apple pie, topped with vanilla ice cream and dulce sauce.

True Taste of Lombardy

Lombardy’s cuisine has roots in many different cultures, resulting in extravagant dishes. Lombardic cooking traditionally uses generous amounts of butter, cream and lard, but some recipes have recently been converted to use olive oil. The Lombardy region is best known for its dairy products, including the region’s world-famous Gorgonzola cheese. Lombardic cuisine consists primarily of rice as a foundation for hearty dishes, including the Italian rice dish risotto. Originally a typical Milanese dish (Milan is the major city of the Lombard region), risotto has gained international recognition on a variety of menus outside the scope of Italian gastronomy.

This month, as the culinary journey around Italy continues, Chef Matteo Fracalossi will take diners to the beautiful region of Lombardy to experience its exquisite cuisine. The journey will begin with gamberi e prosciutto di Parma, which combines Parma ham-wrapped prawns with Gorgonzola and sweet-and-sour pumpkin compote. The first main course will be casoncelli with sausage, cabbage ravioli, potato cream and Parmesan chips, followed by a second main course of ossobuco with slow-cooked veal shank, creamy saffron risotto and light gremolata. Last but not least will be a special Sbrisolona dessert, a traditional cake from Mantova served with Panettone ice cream.
