Park Hyatt Saigon Welcomes New Executive Sous Chef Heath Gordon

Heath Gordon travelled a long way from Australia to become the new Executive Sous Chef at Park Hyatt Saigon. Learn more about this very talented chef.

Where is home for you?

I was born in Melbourne Australia, then through my early teens my family moved to the Gold Coast, Queensland where my love for surfing also started. When I return to Australia my home is on the Gold Coast where my family and friends reside. Home for me now is this beautiful and exciting city. Before I arrived to Ho Chi Minh my home was the UAE for five years.

Why did you choose to become a chef?

I decided to become a chef half way through studying a 2 year hotel management course. While attending the culinary practical and theory classes I knew that was where my passion lay. It also gave me the benefit of starting work later in the day as opposed to a normal 9-5 job which allowed me to spend my mornings on the beach and surfing the amazing spots around the Gold Coast.

Do you remember what was the first dish that you ever cooked?

When I was a young boy I would always be in the kitchen trying to help when my mother was making cakes, biscuits and desserts, i had a naughty side for always trying to eat the cookie dough and cake batter when my mum wasn’t looking, I liked that better than the finished product. The first real dish I cooked was during hotel management, Fettuccini Alfredo, I burnt and destroyed the first one, the chef made me try again and the second attempt was perfect, I can still remember the taste. 

If you were to describe yourself as a dish, what would that be and why?

That is a very tricky question, today let’s go with ice cream, its uncomplicated, straight forward and most people enjoy ice cream.

As Xmas is coming soon, what do you think is the best gift to ever give a chef?

A holiday to Japan, all chefs are fascinated by japan, its cuisine, culture, people and history.

If you could eat just one dish for the rest of your life, what would it be?

I would gladly only eat traditional Japanese sushi forever.
