The Magic of Parmigiano-Reggiano at Opera
If you are an Italian food lover, you may have heard of Parmigiano-Reggiano, or “King of Cheeses” as the Italians proudly call. This April, Chef Matteo Fracalossi will take diners to the provinces of Parma and Reggio Emilia, hometown of Parmigiano-Reggiano cheese, to show us his magic tricks which utilise this wonderful specialty. From beef tartare and truffled egg yolk sauce with Parmigiano ice cream, to pork and chard filling with Parmigiano foam, and slow-cooked veal shoulder and roasted pumpkin served with Mortadella-filled Parmigiano cannoli, diners will be amazed by how such a modest ingredient can be used in such varied dishes. Dessert lovers will surely be satisfied with our special Panna Cotta, with a touch of pear sauce and Balsamic reduction.
Phu Quoc Seafood Menu at Square One
This April, Square One invites diners and their loved ones to experience the refreshing sea breeze of the wonderful Phu Quoc with several of this island’s specialties. The meal will start with lime-marinated sardine fish salad, followed by seafood and nam tram mushroom soup, which will showcase oyster, prawn, baby squid and a touch of Phu Quoc pepper. Grilled scallop, squid, and tiger prawn served with mixed herbs, together with steamed abalone and blue crab Phu Quoc fried rice, will surely satisfy your appetite.
